Domestic Valencia oranges are caramelized whole—peel and all—and carefully pureed. To this, we’ve layered traditional Japanese umami flavors, including “Kokoro no Su” (a special vinegar), domestic wine vinegar, Kishu plum vinegar, bonito flakes, kelp, and white soy sauce. |
