While there are various theories about its origins, it is said to have evolved into a winter food suited to Fukui’s climate from “Hama-natto”—a dish favored by Tokugawa Ieyasu during the Edo period—which his second son, Yūki Hideyasu, brought with him and popularized when he was assigned to Echizen (present-day Fukui Prefecture). |
