By leaving more grains intact than usual, the smooth flow of the liquid itself conveys the refreshing essence of the rice paddies. While the flavor is understated, it possesses the rich depth of miso koji, making it a great match for fermented foods such as grilled meat and pickles. The sweetness is not cloying, and the finish is clean. It’s also excellent when served warm. |
